I've just opened a jar of stem ginger for a recipe and only used two lumps. It says I have to use the rest in six weeks, but I might not. I know you can freeze grated fresh ginger, but what about stem (in syrup at present)? Please advise!

My jar of stem ginger in syrup is nearly as old as I am!

That may be a slight exaggeration but you get my drift.......

LOL.... but is it furry..? :-)
That's my *** not my ginge!
^^^ lol.....
What a load of nonsense. Keep it in a cool place, not the fridge, and make sure that you only ever take the ginger out with a clean implement. Small particles of other foods are one of the causes of mould growing on preserved jams and other foods. My jar is at least two years old and absolutely fine.
It keeps for ages in the jar, if you ensure that the syrup covers the ginger.
Agreed. Mine keeps forever. Even though I 'raid' it just for a piece to eat as it is.
It's wonderful chopped up and mixed with broccoli with a hint of butter as well. Or with carrots!

Brilliant - thank you. The lid is well screwed on, and it's back in the cupboard!
