I'm going to make some mince pies and I want to add some cinnamon to the pastry. I'm gonna use 8oz flour and 4oz margarine for the pastry, so how much cinnamon should I add to the flour to make it noticeable but not overpowering?

I wouldn't put cinnamon in pastry-especially with mince pies. The mince meat itself has a lot of spices in it-adding more spice will cancel out the flavour contrast between filling and pastry. All too much the same.
i agree with pasta. Cinnamon's best in items like Danish pastries
Neither would I, my eldest one (a lovely and up and coming young chef) puts too much in her cooking. I agree with pasta and boxtops - avoid!
I love cinnamon but would not put it in the pastry - if you must add some more add it to the sweet mince.
You could mix a touch of cinnamon with some sugar and sprinkle over the tops of your pies before baking. Try on one first.

Fair enough. I didn't make them then but will do some day soon. Maybe I'll try the sprinkling method on a few and see how that turns out. Thanks.
