Does anyone have the recipe for the Lemon Cheesecake/Flan out of the free Asda Magazine (the one that had all the Mothers Day items in) that was I store recently ?

I also searched for this this morning, I finally got the recipe! My friends mum made it last week - tastes lovely!

Ingredients:
1tbsp seedless jam
75g butter - plus extra for greasing
150g digestive biscuits
397g sweet condensed milk - chilled
Grated zest of 3 lemons
150ml double cream
100ml freshly squeezed lemons

1 - put the jam in a freezer bag and snip off the corner. Grease a 18 x 19 cm flan tin or sandwich tin with butter and line with baking paper. Melt the butter in a pan and remove from the heat.

2 - put the biscuits in a freezer bag and crush with a rolling pin until you get fine crumbs. Mix in the melted butter.

3 - press the mixture into the tin to make an even crust and chill for at least 30 mins.

4 - put the condensed milk, lemon zest and cream in a bowl. Whisk until just combined. Then slowly drizzle in the lemon juice whisking all the time, until the mixture thickens.

5 - Pour the lemon mixture into the flan case. Pipe some jam on top, then using a cocktail stick create a feathering effect.

Serves 8
Ready in an hour.
