Vegetarian Option: Quorn mince cottage pie with peas and carrots

I'm not hungry enough for a main but I'd love some salmon mousse and melba toasts, complimented by a glass of wine or six...
Just menu suggestions plse Mercia. I need inspiration, I am quite a competant cook, its just to save time looking in cook books for ideas. ta muchly
