Starters: dips (Tzatiki - cucumber and yoghurt,) chick pea, and aubergine with warm pitta bread
Carrot and coriander soup
Deep fried breadcrumbed vegetarian 'mozzarella' with sweet chili dip

main: Large Portabella mushroom filled with a herby garlicky stuffing with smoked tofu, served with courgette ribbons and cous-cous

Mixed wild mushroom lasagne with salad and garlic bread

Roasted Vegetable and pasta bake - chunks of red and yellow peppers, courgettes, aubergine, mushrooms and red onion roasted in a drop of best extra virgin olive oil with a hint of garlic and black pepper, then mixed into a spicy tomato sauce with cooked spinach pasta shapes, topped with a creamy thick bechamel, grated vegetarian cheddar, crushed crisps and breadcrumbs, baked until golden - salad good/garlic bread

Thank you Mercia! This menu sounds fabulous. I will be making making it in its entirety soon.

I make a cauliflower baked dish, similar to you roasted vegetable and pasta bake above; only difference is, I use only cauliflower instead of a variety of mixed vegetables.
hmmmm could you leave the aubergine, cooked tomatoes and mushrooms out for me?
like the post above, me too, and include a nice bit of steak or chicken instead? - No? oh...I'll get me coat then....
