Mash potato recipe

hello,

i have a recipe for a potato and stilton cheese pie that i want to make. the recipe states mash potato is to be used as filling but i don't want to put plain mash potato in there.

does anyone know of a decent mash potato recipe that will work well with the stilton cheese?

i'd just make the mash add a dash of cream/butter instead of milk and spring onions or leeks

Why not use the traditional ingredients for Stilton.

Put some onion, celery, and walnuts into a pan with some butter and fry until the veg is soft. Then add to the mashed potato with the crimbled stilton and cook as per the rest of your recipe.......

Maybe add a splosh of port to the water before boiling the potatoes?
