plain roast chicken?

or something different, for a change?
We have chicken as a very rare treat, since I stopped buying sad ones. What could I do with my happy chicken, instead of just a roast dinner?

Stuff the chicken with a whole onion, garlic cloves (to taste) and some lemon for a change and a really moist change to an original roast!!!
Oh and some fresh basil too - missed that out.......

massage the skin with olive oil and a little butter combined with salt and pepper and bung in the oven.....

and tomorrow you can have chicken, avocado and bacon sarnies mmmmmmmmm
soften some butter, add generous amounts of chopped lemon thyme from the garden and mix the two.

Gently prise away the skin from the top of the chicken and push the butter mix under the skin, making sure all the top of the chicken is covered in the butter mix.

Stuff the chicken with onions, herbs, garlic and fresh lemon quaters as mentioned and roast. delicious !!!
Loosen the chicken skin ..squirt in
fresh lemon juice and blobs of butter ..
butter the skin add herbs what ever you
fancy and the rest of the lemon
in the cavity ..cook and enjoy with
fresh steamed veg ..will be round
later to help you eat it !!!

Delia Smith has lots of good chicken recipes on her website. I was just printing off a few the other day and apart from different types and flavours of roasts there were several nice casseroles too. (If you are able to joint your chicken into 8 portions).
