When I add fruit, such as raspberries and apple, to my cupcakes they don't release from the cake cases as well other flavours. I'm sure I'm doing something wrong. At the moment, I'm just adding fruit to a basic sponge recipe - do I need to alter the quantities of flour or something? Please help - I'm losing about a fifth of each cake!

Not sure how you are adding this fruit ,is it fresh uncooked or frozen, usually fruit fairy cakes have , either sultanas or cherries, fresh fruit such as raspberriers and apples are heavier than dried fruit Hope you have luck soon
Have you tried putting them in flour before adding them. Fresh fruit, particularly raspberries tend to hold liquid after they have been washed. The flour absorbs some of the liquid and may help with your problem. :)
Hello you could try making your sponge a bit thicker.
A Maderia.
6oz of butter
6oz of caster sugar
3 eggs
4oz of plain flour
and 5oz of self raising flower.

That is a basic recipe and you should be able to add anything to that. Good Luck.
