Anyone have any good ideas how to use fennel? Thank yoy.

It's nice eaten raw in salads, or you can cut it into wedges and roast it.
Or there is Fennel Risotto with Vodka

2large fennel bulbs, 2 tbsp veg oil, 6 tbsp unsalted butter, i large chopped onion, 360g?12oz arborio rice, 150ml/5 fl oz vodka or lemon vodka, 1.3L/2.25 pints veg stock, 55g/2oz grated parmesan, 6 tbsp lemon juice.

Roughly chop the fennel, reserving the fronds for garnish. Heat the oil & half the butter and fry the onion & fennel for 2 minutes. Add the rice and cook for another 2 mins. Mix the vodka & stock together. Add this mixture to the pan one ladleful at a time, until each ladleful is absorbed. (This should take about 25 mins. Stir in the lemon juice, cheese and remaining butter. Leave to stand for 1 minute then garnish with the fronds and serve.

t the risk of sounding big headed, it it a gorgeous, simple dish. (I leave the vodka out if it's for the kids.)
The aniseedy smell of the fennel & the lemony smell of the lemons go so well together. xx

Chop up the fennal into small chunks.
Fry the fennal in a casserole dish with onion and carrots (I use butter).
Add about 5/6 chicken pieces, a bottle of ale and about 120ml of chicken stock and simmer until chicken cooked and juice are tick!

Yum!
If you roast it in some oil with other veg like peppers, red onion, courgettes etc until they are soft you can then mix it with coucous, pasta or rice. Yum.

Clean & slice it, boil for a short while (I cheat & do mine in the microwave!), then slice some mozzarella on top, sprinkle with grated parmesan & brown under a hot grill - yummy!!
