Which is the best cheese to use in cauliflower cheese?

I like to use a strong mature farmhouse cheddar or a mixture of strong cheddar, smoked applewood and double gloucester (for flavour, depth and colour!).
As said, mature cheddar. I use Canadian, as I find it less salty.

For a crusty topping use Red Leicester and paprika for a colourful combination.

Red Leicester - tastes good & adds a bit of colour. Add some mustard to the sauce to give it a bit of bite, too.
A good strong cheddar, I also love to mix a couple of teaspoons of wholegrain mustard into the cheese sauce - adds a bit of a bite !
crush a pack of cheesy wotsits and sprinkle over the top and bake or grill. the top will go really crispy, yummy!
Hehe, Mandimoo has just reminded me of my secretary's favourite cauli cheese topping - black pepper flavoured crisps, all scrunched up and sprinkled over the top of the cauli cheese, then the dish is popped back under the grill or into the hot oven.... wicked !
