Why does a cup of hot milk grow a layer of skin on the surface? And who 'eats' it anyway?

I agree with Baby02...no idea why it happens, but it's the best bit of a mug of hot milk! I love the skin on all milk puddings too.....!
my aunt uses the skin to make butter and my cousin mixes the skin with hot rice and eat it. he said it's the most delicious thing he has tasted.
Good question. It is caused by the breakdown of the fat and the proteins, when the milk is heated. They are lighter and hence float to the top.
I personally do not drink it, as it comes from a farm. Hope this helps.
