sweet potato and morris piper potato mash, raw beetroot shavings,cook the pork in duck fat. sauce made from cointreau...cream and vegetable stock.pile up mash...put pork stripson top and shave beetroot onto it then put on the suace...enjoy

Cut into one inch chunks, fry until crisp and set aside.

Finely shred some red cabbage, an onion and a sliced apple and stir fry until soft (about 10 mins). Add a couple of tablespoons of vegetable or chicken stock to moisten the mixture and replace the pork chunks.

Serve with mashed potato into which a teaspoon of wholegain mustard has been stirred.
Grill (removes a lot of the fat)
Cut into bite sized pieces
Chop a large onion
Chop a large apple
Place in casserole, cover with gravy, add a dash of Worcester sauce.
Half an hour in the over.
Delicious
I like it served with creamed potatoes and runner beans.
