how did this delicious cheese develop as there aren't that many buffalos roaming the italian hills ?

I think only a small amount of mozarella comes from bufallo - most is cow
Thanks for that link Birt... stupid here thought it meant the huge American animal ... often wondered how they milked them. Drew straws or used people on death row

scooby - if it's cow's milk it ain't mozzarella! There, I grant you, are a number of cheeses on the market masquerading as mozzarella, but the real thing - and you can't beat it - is made in Italy from buffalo milk. Same kind of thing with feta - has to be sheep/goat milk, no cows need apply!

wow ,thanks for that link ,birt , i never ever knew it was water buffalo ,like sherry i too thought it was the big buffalo or bison thats why i asked the question !! still thats what this site is all about isn't it ?
