Following on from the previous question. How exactly are square Pork pies made with an egg running throughout the middle?

What ends up in the chiller cabinet are sections of a very long pie - the egg yolk and white is actually preprocessed and piped in - rather than individual pies being made with an egg in each.
..I used to work for an outside caterers , and was amazed at the bucket fulls of processed "eggs" in a brine solution that they used to purchased ready boiled for salads....they were around 50cm long!...my guess is that the manafacturers seperate the yolks and whites, fill them into some kind of mould and thn boil them...
My first love was a chef, He made these pies, called them Gala pies, It's a long time ago but I think He lined a long square dish with the pastry, then a layer of pork sausage meat into which the whole eggs were pressed longways, more sausage meat topped with the pastry
