I've just bought an earthenware tagine and wondered if anyone has got any recipes to recommend. I'm happy to have a go with stews, curries etc, but wondered if anyone has a 'special' recipe - anything Moroccan or African would be good.

Just google 'Tagine recipes' the choice is yours

if you don't fancy trawling through the 'net, you could do this. It's a family favourite and you don't have to stick to exact measurements - just whatever you think!


this is how I would make it in a reular pan:


fry 2 tablespoons of coriander powder, 1 of cumin powder, 1/2 teaspoon turmeric, cinnamon stick, 1 teaspoon chilli poder with a large chopped onion and 3 cloves garlic. Add chopped chicken breast or chuck in a few legs if you prefer. Add at least 2 pints of chicken stock, juice of a large lemon, 2 handfuls of sultanas and six tablespoons of honey. Leave to cook for as long as you like, adding more stock if starts to dry out. serve with couscous, sprinkled with toasted pine nuts.
