what does the term hot smoke mean in reference to food preservation

I've seen one type of hot smoking in Norfolk and it's a method whereby fish is hung by being pegged out on racks in a chamber that can be more or less sealed and a slow burning fire is lit underneath using oak chippings, hence oak smoked. The whole process can take days and was used a a preserving method before freeze drying and refrigeration. Now of course anything smoked is a delicacy and therefore quite expensive.
