Yesterday I made soup with leftover veg...cauliflower, carrots, sweet potatoes and ordinary potatoes, and stock. I over blitzed it in the pan and it’s turned out like puréed baby food. We had some last night but this morning I decided to throw it away.
However, my conscience got the better of me and I’m thinking of how I can rescue it and turn it into something tasty, maybe a pasta sauce, or even a more edible soup.
Any ideas??

Thin it out with a stock cube in hot water and some spice e.g chilli powder or paprika.
Adding more stock will help, Vagus.
Maybe if you have a hungry pooch?

That isn't fussy.
Cook some onions with stock cube and add to make thinner soup then wilt spinach leaves in it
As Tilly and Danny said, just add more stock to it. I've had that happen numerous times, and it's easy to fix.
I find that adding tomatoe puree to veg soup gives it an extra boost, as does cumin and adding some diced grilled bacon makes it yummy.
Yes and thin it with more stock. I add spinach too.

Doh, thinning it out with stock, why didn’t I think of that!
Will have a fiddle with it later, thanks everyone x

I added a tin of coconut milk, a chicken stock jelly thing, couple of spoons of Thai red curry paste, and some ordinary milk to thin it a bit. It’s delicious.
Don’t think I’m firing on all cylinders at the moment so thanks for your help all.
