Has anyone ever made a cheesecake (baked or set) without the biscuit (or whatever) base? We're currently on a very low carb diet and like to entertain our friends a lot. By way of a change from other stuff, I was wondering if I can make one of my usual baked NY style cheesecakes, but just omit the biscuit base, so as to leave out the carbs/sugar completely. Obviously, the cake section would have sugar in it, but just thinking about how it might work out. Has anyone done this?

No, but I can't see why it wouldn't work.
so it'd be just like a posset ?
why not make these as the base .... could work well with a citrus cheesecake?

Thanks guys, love those recipes, thanks for the links. Will definitely be giving my mum's cheesecake recipe (NY baked) a go without the biscuit base now .... you have definitely inspired me! Now all I need it to find some curd cheese! Cheers, folks - I knew you'd be able to help! Chox.
Tesco, Amazon and Morrisons do curd cheese. They were the only ones I checked.
Wish I'd seen this last night. The answer is yes...even with a crust...using nut flour for the base.

I've even adapted that as individual cakes in ramekins, using none of the artificial sweetners, but vanilla extract and a bit of sugar free vanilla syrup.
For more ideas, just Google keto or lo carb cheesecakes. There are dozens of variations.

Thanks so much for all your help folks, much appreciated. Am definitely going to try out my mum's recipe cheesecake without the biscuit base very soon. Will give making my own curd cheese a go over the next couple of days, and if it's rubbish, will try those stores you have suggested. Thanks a mill, folks ....
