Have this bubbling away on the hob for later.
Not going vegetarian or vegan but just trying to eat less red meat, although this curry would, I think, fit into the vegan category for anyone interested.

My cauliflower curry was awful...... I decided to thicken the sauce with ground almonds and I think they did not agree with me as I was up from 3 am this morning with severe stomach cramps.
I gave up eating red meat months ago substituting it with chicken.I don't miss the red meat at all.
APG, you can thicken up curries etc by adding potato.
Sounds lovely. Might do the curry at the weekend with coconut milk.

Tigger, all I did was google chickpeas cauliflower coconut milk, and up came loads of recipes, all fairly similar.
I let mine bubble away for longer than suggested so it reduced and the cauli was very soft, which is how we like it in a curry.
I'll find a slow cooker recipe to start in the morning :o)
