I have been making this soup for years. Out of curiousity I checked youtube to look at a couple of recipes, and was horrified!! Everybody discards the green part of the leeks!! why?? Its the best part of the vegetable. Rant over.

Ha ha...I don't....I bung it all in!!
I don't. I use them to decorate the finished soup.
Always add the green no matter what I am cooking
I've known someone who cooked asparagus for the first time and discarded the tips!

Thanks folks. i have to make a confession though, whilst staying in a french friends small appartment for a week in the mid 90s( my 1st eurostar channel crossing) i offered to make lunch. My speciality, leek+spud soup. Just like those fools on youtube, i used to always throw away the long green bits. Anyway just as i was about to bin them, my french friend, shouted something to me in french, i´m sure PP would have some idea what she said. Anyway the soup was so much better and as she said repeatedly in french " healthier"
Someone did that ^^^ on Celebrity Masterchef once. Dohhh!
