I have no recipes, I just chuck things in. My favourite meat to use is skinned and boned chicken thighs, then I bung in whatever is in the fridge or freezer in the way of rooty veg and cubed spuds if I want, drizzle with oil, chuck on the herbs or spices I fancy, and sling in the oven.
I’ve just got the book too. Tried a couple of the recipes. Easy and delicious. They were both pasta based with veg. Can’t look them up right now, but I think I remember noting down pages 24 and 36.
Looking forward to doing the shredded rump steak with green beans and baby sweet corn next.
I would go with salmon. That dish on the cover looks lush.
