It's duck breast, dauphinoise potatoes and greens. Cook duck Friday for dinner but OH fell asleep. Didn't get a chance to eat it yesterday.

As soon as it was cooked and cooled down it was wrapped and boxed and has been in the fridge since.

I'm reluctant to throw out some perfectly pink duck.

Ummmmm you are comparing apples and pears here. Its perfectly ok to eat fresh raw fish (tuna salmon etc) and pink in the middle meat if you so want to -my kids like their steak 'blue'. But its Fresh, not been cooked pink in the middle then left 48 hours. I'm sure it will be ok but don't compare it to eating sushi or freshly cooked meats because its not the same.

Gosh. You're talking like I've got it out of the work top with flies buzzing about.
If you have flies around it .. Too late, they have already laid their eggs on it .. the maggots will follow within the week !
Make sure you have a bucket beside the bed tonight !

should be fine.....if it's nicely pink it has had the heat in it - pink is NOT raw.....
