Kidney In Bread Roll.

My mum used to cook whole lamb kidneys in bread rolls. I’d really like to try it myself. She’s no longer with us so I can’t ask her how to do it or for how long.

Can’t find anything online. Anyone here suggest how long to cook them for?

What do you mean clover? Were the raw kidneys baked into the raw bread roll dough, or raw kidneys put inside an already baked roll and then put in the oven, or something else??
I’m curious now as I love kidneys but have never thought of having them with a bread roll.
They sound revolting, however, I would devein the kidneys, brown in oil and leave to cool. Make the bread mix and prove etc, then wrap the raw bread around the kidney and bake for 18 - 20 mins.
Cooking whole is awkward as you need to get to the core as APG says and remove it - they can be lightly pan-fried or braised.

My Gran used to cook ox hearts for hours in the oven, I loved them but was never brave enough to try myself.
I only venture as far as chicken liver as far as organ meat is concerned. Kidneys...noooo!
I used to love offal but around 10 years ago I stopped being able to stand the smell of it.

As far as I remember it was a raw kidney stuffed inside a made bread roll and baked. There might have been more to it that though.

In the end, today, I cut them in half, deveined them, fried lightly and put in a bread roll with a rasher of bacon. Husband says it was delicious.
