This chestnut, bacon and cranberry is nice - I’ve made it in addition to pork, sage and onion

Take a look at this lot, Jennyjoan:

Out of those, the chestnut, bacon & cranberry stuffing might be of interest to you if you want to include bacon. (Read the reviews: people love it!)

My own choice might be the apricot and hazelnut one though.
^^^ I'd not noticed Toorak's link but at least we're thinking along the same lines!
Just make the stuffing as per normal, then pick out all the sage before serving. Voila !
Buenchico - it is delicious! I made it for the first time last year and made it again this year (I freeze it in portion sized batches so we can enjoy it with chicken after Christmas too)
That BBC site seems to have a lot of choice. Unfortunately many seem to want to make it sweet with fruit, or nutty. That roast beef one looks interesting though. Wonder if it'd go well with one's Xmas bird.
