Just realised that the slow cooked honey and mustard ham that’s been in for hours is actually cooking in honey and brown sugar (don’t ask) - will it still be ok? I don’t have any mustard to add to it.

Yes add a wee drop of water and a dash of balsamic vinegar if overly concerned regarding the sweetness
As RR says......I often use brown sugar when cooking a ham.....delicious....x
I follow Delia's recipe with cider, English mustard and brown sugar, really tasty.
I'm puzzled by "I don't have any mustard"....at any one time, we have 5 or 6 different kinds!
Have you got ginger or chilli?

I don’t keep mustard in the house as no one eats it. When I normally do this recipe I chuck the whole jar in.

Anyway, didn’t say anything and no one noticed :)
