I've done some research and I've found that white wine vinegar is most commonly used, but i was after a wee bit of advice regarding flavour!

My neighbour doesn't pickle her own, but she pickles onions with white wine vinegar and some sugar?
If you want a sweeter than usual pickling vinegar, using white wine vinegar and sugar (as in your post above), this might help:

Thank you buen, Mabel said it wouldn't work as well with cucumbers as they're quite watery to start with.
Salt, rinse and blot dry sliced cucumber.

I tend to use either white wine or cider vinegar with a little sugar, coriander seeds and mustard seeds.

Aye. Don't !

Anyway gerkins and cucumbers are different. The former is ok, the latter only useful to expel swallowed poisons.
