Steamer Curdles Milk ?

My wife has developed a liking for Latte coffee. Fed up with the cost of buying the sachets of instant Latte mix I decided to buy a milk steamer. But every time I try to use it ,it curdles the milk. I am using full cream milk. What is going wrong? Milk is well inside its use by date .

Sounds like you might be heating it too long, what frother have you got? Whole milk is the trickiest to get right, skimmed is easiest to start with.

I'll try skimmed, but we never normally bother with it as you may as well use water IMO
Milk steamer? Are you talking about (usual name) milk frother, that heats and froths the milk? Try semi-skimmed and don't over-heat . I have one (cheapo from Aldi) and it's never curdled the milk.

^ I'll go with that I don't mind semi skimmed.
I was told once to use a stainless steel jug for frothing and semi-skimmed milk: it seemed to work fine

It's a Hinari Cafe Continental coffee maker with a steamer arm. You can set it to brew coffee or steam milk.
I think that a stainless steel jug works better with these machines - apparently it heats more slowly so less likely to split the milk

I was using a pyrex glass jug, I'll get a stainless steel one and use semi skimmed. I'll report how it goes.
