Left Over Lamb Ideas

We've got some left over meat from the leg of lamb and I'm looking for ideas. At the moment I am thinking of making a sort of shepherd's pie with a cheesy potato topping, but I'm always open to ideas. I also have plenty of stock for gravy.

Please don't suggest curry - I'm not as tolerant to spice as normal, much to my disappointment.

A hash? Cubed meat, onions, and parboiled diced potatoes fried until crispy. Bubble and squeak cakes... mix the lamb, left over veg and mash...shape into cakes and fry.

I always used to make a hotspot. Easy and simple. Chopped the lamb into chunks, added an onion and the gravy and then sliced raw potato on the top. Popped into oven until the potatoes are cooked and browned.

It was always a favourite with my kids.

I'd have it sliced and warmed inside a large pitta with sliced purple onion, tomato, hummus with a bit of coriander or with tzatziki
Chop into biggish lumps and kebab them with tomatoes & peppers - brush with truffle oil and griddle at nuclear temperature for just long enough to char the outside.

Feta cheese salad and pitta bread - job done.

Do you mean cold, jno? I think it would taste better if served hot.

I think the Shepherd's Pie is probably the best option NoM. Other than that, how about lamb burgers?
I wouldn't think cooked meat would make decent burgers.
You'd have to stick it together with egg & breadcrumbs, ummmm - but it could be OK if the lamb wasn't over roasted - might actually be quite nice with a handful of chopped mint stirred into the mix.

Hmmmm, I do have a bit of potato to use up (over boiled the first lot for the roasties, so it's only fit for mashing).

I'm liking the kebab idea though.

Ah - "fried leftovers" - one of my favourites, pasta - dollop of brown sauce with that?

I wouldn't bother, Dave, as burgers can be made so easily with fresh ingredients.

I'd def go for a wrap or a Shish kebab....griddled peppers, mushroom...and lots of salad.

Side order of some sort of spud :-)
I love fried left overs. If no potatoes, good mixed with egg. And cheese. And spring onions.

Our NoM found the price of beef
was too high, which didn't exactly please her-
Last night she's dined on leg of lamb,
the rest is in the freezer!

Our NoM had a little lamb
her OH shot it dead.
And now she'll carry it to work
between two hunks of bread.
