I've just bought one in Morrisons for £1. I'll probably use a tiny bit- what can I do with the rest eg freeze etc?

Yep, and you can grate it from frozen too.
According to my freezer bible....you grate the horseradish and add 1 teaspoon of lemon juice and 1 teaspoon of sugar to EACH 2 tablespoons of the grated root. Mix well and freeze in small batches. Keeps for several months.

Could I add it to water then freeze it
Oh and would lime juice do the trick as I have no lemons?
Leaving it as a whole root is better overall as it will freeze for longer and will be less susceptible to freezer burn.
....don't use too much water, and lime juice should be OK - it's the acidity that matters.

I just chop it up and freeze like ginger,
