I decided to fry yesterdays left overs in pork dripping from the joint. My departed mother(the queen of lard) would be proud of me :-)

As long as you enjoyed it :-)

I am having bubble and squeak but no fat needed - dry fry and let the juices from the veggies do their job.
Bubble and squeak without butter???
But it's that scotch she adds that imparts the extra juice and makes one squeak.....
yes
o Islay! sweet Islay !
Thou cooking, delighted Islay !
Why, why art thou trying
So far o'er the AB sea ?
O Islay, dear Islay !
The daylight and she is frying,
And here are we ABers longing
And longing for bubble and squeak made by thee!

O Islay ! fair Islay !
Thou dear Mama Islay !
Where my whisky spirit, awaking,
First look'd on the AB day
O Islay ! fair Islay !
That bottle of God's, she's making
Must last, till I wing to the distillery, me
Away, and away !

Dear Islay, good Islay !
Thou, our cookin' Islay !
Thy ABers are sleeping
Beneath thy crofty sod.
O Islay ! kind Islay !
Well, well be thou keeping
That dear bubble and squeaking awaiting
The yapping of your dog.

Our AB Islay ! the Sottish Gods bless thee,
Thou, Islay, the amazing butter-free kitchen
And bless thy darkened whisky tea !
And Islay, dear Islay !
Our heart's best bubbly, squeaky emotion,
For ever and ever
Shall centre in thee !
