I do really enjoy them but now I am coming to the conclusion that the chefs faff and fart around so fast - how can the viewer pick it all up. Mary and Paul too.

Some are more informative than others - a lot do seem to be showcasing their skills rather than taking the viewer through a recipe.
Most of the programmes are linked to new cookery books they are bringing out so you have to go buy their book to keep up -then it never turns out like theirs. Nigella is the worst -her recipes never ever work out for me.

no bloody recipe works out for me so now it puts me off buying the ingredients and for it all to go wrong. As I said before I do believe you are and become a pretty cook when you learn from your mother/grandmother. My poor oul ma was not a great cook - but we all lived. LOL
my mother was a terrible cook but my paternal grandmother was really good -I still use her recipes. Chefs are getting worse all this faffing around stacking things up and making tiny dabs of sauce when all you want is a good lot of home made gravy

very true retro- also remember Paul O'Grady said once on a programme - "wish they would stop sticking their fingers into the food to taste it" it turned him I believe.
Maybe you can catch the bits you failed to note on "catch-up".
