My neighbour has given me a recipe for Coconut Bread which she claims is wonderful. Thought I'd have a go at it today and the recipe calls for 2.5 cups of flour. She's not in so I can't check with her - it's an Australian recipe so I googled how much a cup would be equivalent to and it's 8oz. That would mean 20oz for the bread in a loaf size tin. Seems a lot of flour to me and I wonder if anyone can confirm the quantity or tell me the right amount. Also I haven't got any baking powder - can I use bicarbonate of soda instead?

An Australian cup is a wee bit more than an American cup and weights vary according to the ingredient. From this site, https://www.dovesfarm.co.uk/resources/conversion-tables/us-cups-conversion-table/ a cup of flour is 120g so 2.5 cups will be 300g. A cup of water is about 8 fl oz so is that where the weight come from?
If you use the same physical cup to measure the ingredients, they will be in the same proportion as in the recipe so you needn't weigh anything.

The problem was that the flour and sugar were given in cup measurements but everything else was in gms or teaspoons. Anyway, it was solved by my neighbour coming back - she has a set of 4 cups which she lent me and I filled the 1 cup with flour and it was 6.5oz

jennyjoan - just seen your post. It turned out okay but I wouldn't rave over it like my neighbour did. It was like a heavy coconut cake.

Apparently there is a difference between baking soda and bicarb of soda so I popped out and bought some baking powder.
