I would like to put some chillies in olive oil as I have so many, but do I have to heat the oil or cook the chillies? I want them to stay nice and red, and I want them to keep a long time so I can give them as presents.

I once made the mistake of popping whole chilies into the oil, but this is not the correct way. You have to gently fry the chopped chilies in the oil and then strain back into a bottle once cooled.
You can even add garlic and any herbs you fancy.
That recipe is for Chilli Oil, do you want to use the chillies later in cooking?

I fancy putting whole chillies in nice little jars like the ones I once saw in a shop in Italy, so both the chillies and oil can be used.
