I need a recipe for a 6" x 3" plain vanilla sponge cake. It is going to be iced with sugar paste so needs to have a bit of substance about, not soft and airy. ASAP thanks

Failsafe recipe. Weigh 3 eggs in their shells. Use the same weight of butter, sugar and s.r. flour. Cream butter and sugar, add beaten eggs slowly (beat them in gently), fold in the flour and possibly 2 tablespoonsful of milk (depends) to soft dropping consistency. Cooking depends on your oven 180C for 20 mins-ish or in my fan oven I do 160C for 30 mins.. Cool, remove from pan. Good luck.
Sorry, forgot sieve flour with pinch of salt and 1 tsp. baking powder.
Jourdain I like your method, but why would you use baking powder as well as SR flour? I thought SR already had those ingredients.

I don't know Qizzy - but it works! I have one in the freezer ready for the village show on Sat..
