Im planning on making a special birthday cake for my fiance but part of the cake requires me to make modeling chocolate so I am able to mould it in to shapes and roll it out.

How do I make this modelling chocolate?

I would buy it in from your local cake decorating specialist or on line from somewhere like Squires Kitchen.
