Not sure what else I can do with these apart from marinate them and put them in a pitta bread.  Does anyone else have any recipe suggestions please?

How about a saltimbocca. This is a very quick recipe.

  1. Put inside a freezer bag or two sheets or relatively strong plastic, and give a good whack with a heavy frying pan.
  2. Put some fresh sage leaves and then some dry-cured ham such as Parma or Serrano on one side.
  3. Season with a mixture of flour, black pepper and - if you have some lying around - freshly ground fennel seed.
  4. Fry for a couple of minutes on both sides in plenty of butter, starting with the side with the sage and ham.
  5. Deglaze with white wine and a little cream.
slice them up and do a stirfry with them or make some turkey and mushroom special fried rice..you could also put breadcrumbs on them and have them with chips or salad...or you could curry them..
Mince or process, add 1 tbsp ketchup per lb, 1 tbsp terriyaki sauces pr lb and 1 egg yolk. Squidge up together and sit in the fridge for about 1 hour. Make into 4 burgers (squeeze hard into a ball in your hands then flatten out gently) Sit back in fridge for about an hour then oil and cook in a barbecue or non stick pan Yumm

Thanks everyone - will be having a go at all of those!

They're nice fried with mushrooms, add stock and a bit of redurrant jelly then thicken the sauce.
