A friend was talking last night about his grans homemade mushroom ketchup, she is no longer with us and nobody knows her recipe. can anyone help with a recipe as I would like to try making a batch. thanks in anticipation

I have a mrs Beeton's recipe from a genuine 1900's cookbook, but it starts 'Procure 4 quarts of mushrooms' which I equate to be about 6 kilos. Its basically a right faff on and I would tend to agree with gingejbee
What on earth is mushroom ketchup? Surely it's just mushroom sauce? Does anyone actually like it? I like mushrooms but mushroom ketchup sounds grim!
If we all liked the same things how boring life would be...
@legal girl: it's actually a cooking ingredient that gives a more intense mushroom flavour to cooked dishes. Think mushroom-flavour Worcester sauce.
I think the name "ketchup" is rather misleading.
it's something that adds this new flavour, 'umami,' as mushrooms are reckoned to be rich in it (as is tommieketch)..........
DT: I have a tube of umami paste, too. Isn't Waitrose wonderful?
Our nearest is Saltash or Okehampton - waiting for them to open in Truro - it's been promised.....a truffle adds the same oomph taste wise, but for the special dinner!
