Making Decent Scones.

I have tried two different recipes for fruit scones; both times the scones have turned out hard, in spite of following the recipes to the letter. How do I make soft scones?

Try this 8oz self raising flour 1 tsp baking powder pinch salt 1oz sugar 2 oz margarine Natural yogurt to mix Gently rub margarine into flour, using a fork is fine. Add sugar and salt. Stir in some sultanas if wanted. Stir in about 3 large tablespoons of natural yogurt, adding more if required, till it makes a soft texture. Roll out gently, you can even just push...

I suspect that you are handling the dough too much. Scones need a very light touch indeed.
also, they need to be pretty thick
Apparently the raising agent is all important too. If you google 'making perfect scones' the first link explains all about ..er...making perfect scones :)
This recipe makes beautiful light scones.Just add 100g fruit to the dry ingredients.

Try this
8oz self raising flour
1 tsp baking powder
pinch salt
1oz sugar
2 oz margarine
Natural yogurt to mix

Gently rub margarine into flour, using a fork is fine. Add sugar and salt. Stir in some sultanas if wanted. Stir in about 3 large tablespoons of natural yogurt, adding more if required, till it makes a soft texture.
Roll out gently, you can even just push the mixture flat, and cut to size required. Bake in hottish oven, about Gas 6-7 for about 10-15 mins, depending on size of the scones, till golden brown. Handle as little as possible.
Sorry I cannot be more specific with the recipe, but I usually just throw things in!
Don't mix or handle too much and pat it out, don't use a rolling pin.

Here is a great recipe with no rubbing in, really fast to make. The recipe is for apple cinnamon scones but if you want plain just leave out apple and if you want fruit just add some dried fruit.
