got loin of pork instead of leg

not sure how to cook this - would i be better slicing thickly and cooking like steak? Would it be too dry if roasted like a leg?

Loin has little fat so I'd roast it wrapped in tin foil.

What I usually do with loin is roast it until it's pink. Then I make a sauce and put the pork in to heat (sliced) and it also finishes off the cooking.

that is how i would do a fillet, ummmm, so i'll treat the same as that then?
i usually make a creamy mushroom and leek sauce, but fancy somethign different. any suggestions?
I cook mine exactly the same as ummmm does.

What about an apple and cider sauce?
Alternate slices of (d - shape) onion and apple around the joint while cooking.
I usually serve it with a cider sauce.

You can put apple and onion in the tin foil. Heat a pan, reduce cider, put in the cooked apple and onion, dash of cream, load of pepper.
My kids like it. The alcohol is cooked out.

Pear cider is really nice if you like a sweeter sauce.
You could put a sticky marinade on the pork before roasting - perhaps french mustard & apple & some balsamic vinegar & a little olive oil (stick the whole lot in a blender for a few seconds).

The marinade will give you lots of nice sticky juices from the roasting as the basis for a nice gravy (or indeed 'jus' if you are feeling a bit french).

Ha...I avoid 'sticky' sauces as it's a pain the arrse to clean the pans...

here's a top tip that will change your life, ummmm, in exchange for your advice!
Put daz powder or other detergent in your sticky burned on pan or roasting tray, fill with hot water. by the time the water has cooled all the crud will just wipe off!
