apart from pizza of course ;-) i got loads of cheeses off a friend and do not know what to do with it .

Make a basic cheese sauce added to softened onions. (green pepper chopped and softened optional) Stir in crispy bacon and mushrooms. Add a few drops of tabasco and other seasoning, a splurge of tomato puree and a pinch of sugar. All this can be done in the same pan. Cook some macaroni. Depends on how many you are feeding. Deep fried cheese in batter, Cheese fondue, Lasagne, garlic and cheese filled chicken breasts, cheeses scones/muffins, cheesecake,
for breakfast or tea time snack - a take on welsh rabbit toast bread on one side and lightly on reverse. in a bowl grate some cheese and add an egg mix together and season then smear mixture on lightly toasted side and grill till it bubbles mmm
Fry some mushrooms in garlic butter. Toast some bread and spread the mushrooms on the untoasted side then cover thickly with cheese and put back under the grill. Yummy!!
Cheesy Jackets :- cook 2/4 jacket potatoes i n the microwave for quickness, let them cool a little, cut in half and scoop out the potato carefully put in a bowl with a little milk, butter or marg salt & pepper and lots of grated cheese, mix/mash altogether, then carefully spoon mixture back into the skins, add grated cheese on top of each one then place under grill until top cheese melts, serve at once, delicious and very filling.

Tuna melt.
Mix some tinned tuna with mayonnaise and, if liked, a few finely chopped spring onions. Put on toast and cover with sliced cheese and tomato. Grill until the cheese melts. Serve with salad garnish and some tomato ketchup.
Cheesey vegetable and pasta bake.

Get a selection of vegetables, eg courgette, mushrooms, peppers aubergine
broccoli, peas, tomatoes and cut into bite sized pieces. Fry a chopped onion and a clove of garlic if liked in a little oil, drain on kitchen paper and leave on one side. Cook enough pasta for how many people you will be serving (remember there's veg too) for about 8 mins and drain. Make a white sauce using the roux method with butter, flour milk and seasoning. Add two handfuls of grated cheese or a mixture of cheeses into the sauce. Mix everything together, check seasoning and then top with more grated cheese, mixed with a packet of crushed potato crisps, and a handful of fresh breadcrumbs. Bake in the oven gas 4 180 or 350 for about 20-30 til golden brown

ive got mature chedder, light chedder and med cheddar and some french brae. i like the thought of mercia,s recipe but have never heard of the" roux method "?
Hi golden - the roux method is where you chuck the milk, flour and butter in the pan, bring up to just before the boil (stirring or whisking all the time). Continue to simmer gently for a couple of minutes (to cook put the flour). I then season and add the cheese. (Ps - first time you do this you will probably think it is not going to work or it is going to be really lumpy, just keep whisking and it will be fine.)
Cheesy leeks...
Melt some butter in a pan,add leeks and cook gently until soft. Add a bit of cream,and season...let bubble a bit. Throw in a good handful-or 2-of grated cheddar-the stronger the better. As soon as it is melted....eat! Yum...

Or have a cheese beano - toasted cheese with baked beans on top - yum. I fancy some of that myself now, only I've no beans. Or cheese actually.....

Cheese and potato pie :) Brie is nice melted with mushrooms and used as a sauce over steak.
