in one of the fridges at my work there is a block of cheese that is 1 year out of date.

it is cheddar that has been matured for a year before purchase, and it is completely sealed.

Will this be safe to eat? I've said no, but my mate thinks that it is just like maturing it for another year - but i'm pretty sure the maturing process is slightly more advanced than just leaving it in a fridge.

I have eaten cheese that is blue moulded and out of date- Cut of the mould and go for it -it would be different if it had been left out of the fridge. We had no problems with it. Certainly the cheese had not been there for a year. Give it a try
Eat it tonight just before you go to bed and come back tomorrow and tell us all about your dreams!!
...there is a local cheese factory round here that are rumoured to collect their out of date cheeses from local shops, shave off any mouldy bits and re package it for resale...
The answer is in the question - its mature and its been kept chilled - it will be fine - the out of date and sell by dates are only guides and if we all kept strictly to them there would be even more of a mountain of waste than that already produced.
