It is said that you should not mix grape and grain.  I find that if I drink spirits and wine on the same evening, I feel awful next morning.  If I stick to one or the other, I am fine.

In a word - congeners (or so I've heard).  Those are the things, chemical or natural, that give the drink its flavour and colour.  Mix your drinks and you're taking an unknown cocktail (pun intended) of those.

 

It could also be that you mix your drinks when you stop thinking straight because you're already rather whistled - in short you're more drunk than you think!
