Hereditary fructose intolerance is produced due to a deficiency of the enzyme, aldolase B that cleaves fructose 1-phosphate, which is formed from fructose by the action of fructokinase, to dihydroxyacetone phosphate and D-glyceraldehyde. Due to the deficiency of the enzyme, fructose 1-PO4 accumulates in cells and causes hepatic and renal damage.
