I've now had a couple of consultations with an endocrinologist, had blood tests and provided 8 litres of urine that I collected over 24 hours, and it looks like I have a mild case of Diabetes Insipidus, though confirmation will be after another blood test and an MRI to rule out any problems with my pituitary gland. I have to start on a low dose of medication that stops you being thirsty. Fingers crossed that I can finally get things sorted, it's exhausting.

Thank you. I'll do as I'm told and hopefully get more than 2 hours sleep at a time. It'll be worth it just for that.
