Can I use beard trimmer for humans to remove knots from our long haired Ragdoll cats?

Good luck! Lol. Personally, I would use scissors, to make sure it doesn't pull.
Put olive oil on the clumps and the cats will lick it off and the knots disappear (tried it on our cat, worked a treat) - far less distressing than a noisy set of clippers.

No. It will pull, no question. Your cat will be in pain.

Use your fingers, gently ‘tease’ the matted fur, maybe cut bits out with sharp scissors (carefully!)

It will take a LONG time, so be patient.
With our rag doll and Maine coon we used fingers and scissors for the bigger knots. Maine coon goes to the vet, lies on her back and purrs while they use dog clipper on her tummy! Wouldn’t try human ones the pet ones have different guards on them
I used very sharp scissors on Caspar when he got matted fur almost every year. But one year I had to have him shaved as it was so bad. Knots never came back.
