Eggs Have Turned Green...yuuk

yesterday i boiled some eggs, mixed them with red onion and mayo salt and black course pepper to be used to make sub rolls.

looked today and they have turned a mouldy grey / greenish colour. could it be the red onion maybe i should have used white onion.

eggs were from tesco. what is best way to make egg mayo samwhich mix ?

Their fine, just a bit of oxidization around the yolk.
If you keep chickens you can have endless fu8n making egg yolks different colours according to what you feed them.
The eggs will smell badly of flatulence if they are off - not just the normal 'eggy' smell. Which also smells a bit like flatulence.
If it doesn't smell it'll be fine.

I make egg mayo similar to you and use rocket as well.
To keep the eggs from turning green, here, Mrs. C. has always used the method described in this article: http://www.simplyrecipes.com/recipes/how_to_make_perfect_hard_boiled_eggs/ and they've always turned out about like the ones in the pictures...
plunge them in cold water once they are hard boiled..this stops the green/black ring forming round the yolk

why do i go into a samwhich shop and the egg mayo filling is allways yellow and white. this colour is off putting, theyre binned now.
Are you putting them straight into cold water or leaving them to cool naturally?
Probably a combination of poorly cooked eggs and bleeding from the red onion.

A waste to have thrown it in the bin though, quite unnecessary.
When you cook boiled eggs run cold water in the pan until the eggs are cold. This will stop the yolks going grey.
If you had run the pan of eggs under a cold tap after cooking until they are cold enough to pick up, you would have had perfect eggs. There was nothing wrong with them being grey around the yolk at all.Whenever we had hard boiled eggs with a salad at Secondary school they always had the grey round the yolk. Its perfectly harmless.

made an omellette this morning using red onion, seems the red onion is discolouring the eggs so the moral of the story is.

also the perfect boiled egg which u can peel the skin off without half the flippin egg coming away -

Ah - the secret of perfect happiness. If you discover it, cherish it.
The fresher the egg the harder it is to peel.
Personally, I never see the point of red onion, tasteless in my opinion, I like an onion with a bit of bite!

yes, red onion from now on i will only use for salads.
You BINNED the eggs!!!??? What a waste. They were for eating...not putting on display as perfect egg Mayo.
