Successful Brownies

I had a brownie in a cafe the other day which was dead nice- solid and heavy with a slightly fudgy wet inner and crispy outer. I have tried to make them using a mix, egg, oil and water plus choccy bits but it comes out tasting more like cake. How can I get the consistency of the ones in the cafe?!

Best I have ever made.
I use bbc goodfood best ever brownies, link above from Buenchico, works every time, the instructions do seem to be long winded, but once you've done it a couple of times you soon get the hang of it.
