Does anyone know if it would be ok to melt the cheese bit using the oven (I would toast the rolls first) - I want to use the oven as I need to cook two trays of rarebit and don't want them going cold. Thank you.

I don't know what recipe you use, but I make my 'cheese bit' in a saucepan

I don't usually use a saucepan recipe but I might tomorrow - don't you still brown it somehow?
I toast the bread, put the grated cheese on top then bung it in the micro. Won't work for two trays though.
I use:

Beer, mustard powder, butter, cheese, egg yolks & Worcester sauce

I can't give you the amounts as I just do it. I cook them in a saucepan, let it cool a bit and then put it on pre toasted bread and grill it briefly.

It would work in a hot oven as this would brown the cheese mixture, but watch it like a hawk

I have a vague mixture that I use so I'll try that and then bung it on toasted rolls and try the oven. I usually only make it for myself but I'm inflicting it on the rest of them this week.

Worked just fine in the oven but the rolls went a tiny bit too crunchy in areas. Only fly in the ointment was that boy #2 convinced himself it had actual rabbit in it and decided he 'didn't like it'.
