Carrot Salad

I forgot to buy a white cabbage to make coleslaw to have with our chicken salad this evening. Had a root around and came up with two large carrots and most other ingredients to make carrot salad instead.
Blooming lovely and highly recommended if you like tasty things.
The dressing is oil, lemon juice, honey and mustard. Additional to the carrots are two finely sliced spring onions, a small handful of chopped walnuts, and a sprinkling of pine nuts.
Not a question, more a suggestion :)
