Why can I no longer change to italic and the colour I want to use for my emails? Never happened before.

No idea until you tell us what your using to compose your emails and whether this is on a Windows pc, Android tablet, smartphone, Ipad?

Many email system have a choice between "plain text" and "HTML" (it may also be other names).

Plain text is just that, the text is plain with no colours, fonts etc.

HTML allows you to use fonts, colours, images etc.

Check your email settings to ensure it is NOT set as Plain Text or similar setting.
